Practically Panforte

Another recipe generously shared with me from my front of house hospo days. Again, this is a naturally gluten free recipe. If you prefer you can swap out the liquor for more orange juice/honey mix instead.

ingredients
  • 450g dried figs & other dried fruit such as sultanas, raisins, stone fruit etc, roughly chopped
  • 100g mixed peel
  • 150g prunes
  • 60ml orange liquor eg Grand Marnier
  • 20ml orange juice
  • 20ml honey
  • 125g hazelnuts, roasted & roughly chopped
  • 300g dark chocolate, melted

method

Steep the fruit in the combined liquids (liquor, juice, honey) for at least one hour.

Add the chopped nuts and melted chocolate then stir until well combined.

Press this mixture into a lined tin or pie dish and refrigerate until set. Remove from the fridge to cut – small wedges look elegant – and store in an airtight container. If you live in a warm climate, feel free to store in the fridge.
